Usually introduced to foreigners as a thick soup, gēng is certainly one of the most popular dish among locals yet too often overlooked by tourists. I had yet to read someone rave about it until recently. Thanks Eating Asia for finally giving it some love.
As far as I understand, gēng can be written in three forms 羮, 羹 or 焿, all referring to the thick soup, so if you see one of them at a crowded stall, give it a try! 😀
